Base -
1 packet of coles brand shortbread cookies
Filling -
3 pkts cream cheese (softened)
1 cup sugar
4 eggs
2 tsp lemon juice
Topping -
1 cup water
1 cup sugar
3 tbsp corn flour
3 tbsp jelly crystals
Method:
Fill 2 muffin trays with patty cases. Place one biscuit in each case. Beat all the filling ingredients together in a mixing bowl. . Spoon onto the biscuits until the patty cases are 3/4 full. Bake for 18-20 minutes on 175 degrees. Cool.
In a small saucepan mix sugar, water and corn flour. Stir over heat until mixture boils and thickens. Remove from heat and stir in jelly crystals. Top cheesecakes and set in fridge.
Notes:
Try putting a slither of fruit under the topping. I have used strawberries and kiwi fruit. I have also experimented with different coloured and flavoured toppings. Any jelly crystal will work so have fun playing with the different colours and flavours!
