Banana cake with cream cheese frosting

Ingredients:

Banana cake -
1/2 cup butter
3/4 cup sugar
2 eggs
2 bananas, mashed
2 tbsp boiling milk
1 tsp bi-carb soda
1 cup sifted flour
1 tsp baking powder

Cream cheese frosting -
60g cream cheese, softened
30g butter
1 tsp grated lemon rind or 1 tsp lemon juice
1 1/2 cups icing sugar


Method:

Cream butter and sugar. Add eggs and mashed bananas. In a small jug heat the milk until it begins to boil (about 30 seconds in the microwave). Immediately dissolve the bi-card soda into the hot milk (it will froth right up). Add milk mixture to the batter. Sift in combined remaining ingredients. Cook in a moderate oven until a skewer comes out clean when inserted into the middle. Cool.

Combine all frosting ingredients in a mixing bowl. Mix well. Spread onto cooled banana cake.
