Gail's Rice Salad

Ingredients:
1 cup brown rice
1/2 cup craisins
1 cup red capsicum
3 spring onions
2tbs pine nuts
2 tbs sunflower seeds
3tbs cashews

Dressing -
1 tbsp soy sauce
1/4 tsp garlic
1/2 tbsp lemon juice
1/2 tbsp olive oil


Method:
Cook the brown rice until just tender, cool. Combine the craisins, chopped red capsicum, chopped spring oinions, pine nuts, sunflower seeds, cashews and cooked brown rice in a mixing bowl. In a separate small bowl or jug, combine all the dressing ingredients and stir well. Spoon the dressing over the salad and mix. Continue adding spoonfuls of dressing until desired taste is reached. Chill the salad for at least 20 minutes. Once chilled, scoop into a salad bowl and serve.

Notes:

I very rarely use all of the dressing. It is quite strong so only add a bit at a time and keep tasting it until you think you have enough. If you tip it all on you will probably find it is too over powering.
